Happy Cinco de Mayo!

It all started on May 5th, 1862 when the Mexican Army defeated the French. The battle was fought in Puebla, Mexico. When the French issued the retreat, the celebration began and Cinco de Mayo was born. Some ask if this is Mexico’s Independence Day, but it is not. That is a whole other day to celebrate in mid September. Today, we enjoy the celebration of this day with traditional Mexican Food and deserts. Music and dance are also involved. Over the years it has become a highly celebrated day in the U.S. It’s a day for togetherness with family and friends.

Some traditional dishes to celebrate with are Enchiladas, Mole Poblano, Pozole and many others. Side dishes include Rice and Beans and, one of my all time favorites, Guacamole. Traditional deserts include Flan, Tres Leches Cake and, my favorite, Churros.

However you choose to celebrate, the most important thing to include is plenty of family and friends.
